Pineapple chicken salad with coconut chili macadamia nuts
Serves: 4-6
2 heads of hearts of romaine
1/2 pineapple- peeled and cut into cubes
2 roasted chicken breasts cut into cubes
1 carrot, grated
Lime juice from 2 limes
1 shallot, peeled and diced
¼ cup extra virgin olive oil
Salt/pepper
1/2 bag of Oren’s kitchen coconut chili macadamias
- Place the diced shallot in the lime juice, let stand for 15min.
- Add olive oil to the shallots and lime juice. Mix well.
- Clean and chop the romaine lettuces
- Mix with the carrots, pineapple, chicken and vinaigrette
- Sprinkle the coconut chili macadamias and serve.
